I saw one media outlet call the aircraft 'An Apollo 11 Aircraft'

Apollo 11 was the callsign.

BAe Systems have confirmed the sonic boom was caused by a Typhoon on a test flight from BAe Warton.

https://www.bbc.co.uk/news/uk-england-lancashire-60391630

I checked FR24playback and there was a test flight callsign WTN10,route was from Warton to north tip of IOM and on towards Maryport.

You kind of want to know what was the thought process (or lack thereof) that the reporter went throught to lead them to connect these, completely separate, events

Likely they just lifted the " story " from social media, and didn`t bother to check anything for themselves. Lazy, and frankly embarrassing journalism seems to almost be the norm now.
